Renaissance Stock (makes 2 quarts)

2 sprigs rosemary
2 bay leaves
3 sprigs mint
4 sprigs parsley
1 whole mace
2 onions peeled and quartered
1 cup white wine
8 dates, pitted and chopped
cup currants
salt
pepper
chicken stock
2 quarts water

Boil the water. Add the herbs and onions and simmer for 30 minutes. Add the wine and fruit and simmer for 1 hr. season with salt and pepper
