Baked Mushroomsfrom the book "Early French Cookery"

Served at the Herne the Hunter
1 lb mushrooms
Clean the mushrooms. Peel the rind from brie and set aside. Cut cheese into small pieces. In a food processor combine cheese, oil and spices. Gently fold in mushrooms. Brush oven proof casserole dish with oil and place the mixture in dish. Cover and bake at 375 for 15-20 minutes. Sprinkle with parmesan cheese. Bake at 400 for another 10 minutes and serve warm.
